This Mother's Day, skip the store-bought sweets and let the kids do the baking. These Morning Glory Muffins are one of those rare recipes that checks every box , they taste like a warm, spiced hug, and they happen to be genuinely nourishing.
They're grain-free, dairy-free, and brimming with real-food ingredients: grated carrot, apple, coconut, raisins, and almond flour. No refined flour, no refined sugar , just whole ingredients doing what they do best. And here's the kicker: they're easy enough that your husband or your seven-year-old can lead the charge while you sip your coffee.
Functional Ingredients
Almond Flour
Healthy Fats, Protein & Magnesium Almond flour replaces conventional grain flour entirely, bringing with it heart-healthy monounsaturated fats, plant-based protein, vitamin E, and magnesium, a mineral many of us fall short on. It also keeps the glycemic load of these muffins significantly lower than traditional recipes.
Carrots
Beta-Carotene, Fiber & Vitamin K Carrots are a rich source of beta-carotene, which the body converts to vitamin A , essential for eye health, immune function, and skin integrity. They also add natural sweetness and prebiotic fiber to feed your gut microbiome.
Apple
Pectin, Quercetin & Soluble Fiber Grated apple provides pectin , a soluble fiber that forms a gel in the gut, slowing glucose absorption and supporting a gentler post-meal blood sugar response. Apples are also a source of quercetin, a flavonoid with antioxidant and anti-inflammatory properties.
Shredded Coconut
MCTs, Fiber & Satiety Unsweetened shredded coconut contributes medium-chain triglycerides (MCTs), a form of fat metabolized more quickly than long-chain fats and readily used for energy. The beautiful photo in this post was shared by a grateful client who bakes these for his family on repeat. Now it is a true staple in their home. He also created this protein- packed icing that makes it into an amazing healthy treat.
It uses thick greek yogurt as a base. If you need to avoid dairy entirely, try using coconut yogurt instead.
You can also use vanilla flavored protein powder if desired. I love to use bone broth protein powder for its gut health benefits.
